Masala Chicken

This is a very simple dish but bengalis love it.
Marinade the chicken with turmeric,salt,tomatoes ,a pinch
of red chilli powder and a little oil for atleast 1 hour.
Heat oil in a kadhai(u can also do it in a pressure cooker)
and fry some potatoes(skinned n cut in half).Take the potatoes
out of the pan ,put 1 or 2 bay leaves in the oil and fry
some chopped onions.After 1 min add some skinned and chopped
garlic cloves .After the onion and the garlc gets light brown ,
add masala(jeera powder ,red chilli powder and a little turmeric
powder.Mix these in little water in a bowl and then add to the
kadhai)and ginger paste.Fry the masala and then add the marinaded
chicken and stir for a while.Add some Garam masala(Cardamom,
cinnamon and cloves)(grinded)and a few whole cloves(4-5)of garlic
with their skin on(this is vital since it enhances the flavor).
Add the potatoes. Add some whole green chillies(or cut the chillies
in the middle if u want it hot) and a little water.Now close the lid
and let the chicken boil.After the chicken and potatoes are cooked,
open the lid and let the water dry.Close the oven and add some ghee
and let the kadhai /pressure-cooker sit on the oven for some time
(say nearly 10 mins)with the lid on.This will help to blend the
flavor of the ghee with the chicken.But be careful so as not to
overcook the potatoes or burn the chicken.The dish will be dry.
It is delicious with both rice and roti.
